  8. 2 tbsp crispy onions

INSTRUCTIONS

Cook the pasta

Bring medium saucepan of salted water to a boil. Add cavatappi and cook until al dente, 8 to 10 minutes. Reserve ½ cup pasta water, then drain and set aside.

Cook the cheese sauce

Heat 2 tsp olive oil in same saucepan over medium heat. Add shallot and cook until soft, 2 to 4 minutes. Stir in reserved pasta water, queso, cream cheese, nutritional yeast, just ½ tbsp vinegar, and spinach. Cook over medium-high heat until spinach is wilted, 3 to 5 minutes. Stir in cooked pasta.

Serve

Divide between two bowls and sprinkle with crispy onions. Dig in!
