  2. 6 oz broccoli florets
  3. 1 avocado, halved, peeled and diced
  4. 0.25 oz dill, fronds chopped
  5. 2 tbsp pistachios
  6. 1/4 cup vegan tzatziki
  7. Salt (from your kitchen)

Prepare the broccoli

Bring small saucepan of salted water to a boil for broccoli. Make small tear at top of brown rice bag and microwave bag for 90 seconds. Add broccoli to boiling water, cover, and cook until crisp-tender, 2 to 3 minutes. Drain broccoli. (TIP: You can also combine precooked brown rice and 1 tbsp water in small saucepan over medium-high heat. Cover and steam until warmed through, 3 to 4 minutes.)

Serve

Divide brown rice between 2 bowls. Add broccoli, avocado, and dill. Top with pistachios and drizzle with tzatziki.
