INSTRUCTIONS

Toast the bread and cook the burgers

Heat 1 tbsp vegetable oil in large nonstick skillet over medium heat. Add buns, cut side down, and cook until golden brown, 2 to 3 minutes. Set aside. Add 1 tbsp vegetable oil to same skillet over medium-high heat. Cook burgers until browned and heated through, 4 to 6 minutes per side. (4-servings: use 2 tbsp vegetable oil, 2 tbsp vegetable oil)

Make the spicy ranch celery slaw

Stir together ranch, sriracha, and a pinch of salt and pepper in large bowl. Add celery and toss to combine.

Finish and serve

Place bottom half of each bun on plate and top with carrot burgers and some spicy ranch celery slaw. Close sandwiches. Add mixed greens to remaining celery slaw and toss to coat. Divide salad between plates. Dig in!
