  3. 1/2 cup walnuts
  4. 1 tbsp bay seasoning (divided)
  5. 1 tbsp Mexican oregano

  7. 6 oz chile con queso
  8. 2 oz vegan cream cheese
  9. 1 tbsp cayenne pepper
  10. 4 tsp vegetable oil (from your kitchen)

INSTRUCTIONS

Boil the pasta

Bring medium saucepan of salted water to a boil. Add penne and cook until al dente, 8 to 10 minutes. Reserve ¼ cup pasta water. Drain pasta and set aside. Set saucepan aside until step 3.

Make the walnut breadcrumbs

Heat 1 tbsp vegetable oil in small nonstick skillet over medium heat. Add panko, walnuts, and a pinch of pepper and cook, stirring frequently, until lightly golden brown, 5 to 7 minutes. Add just ½ tsp bay seasoning and just ½ tsp oregano and toss until well-combined; set aside.

Finish the mac & "cheese"

Heat 1 tsp vegetable oil in same saucepan over medium heat. Cook garlic until soft, 2 to 3 minutes. Whisk in queso, cream cheese, just 1 tsp bay seasoning, just ¼ tsp cayenne, and reserved pasta water and heat until smooth, 3 to 5 minutes. Stir in cooked pasta. (TIP: Add more cayenne if you prefer more spice.)

Serve

Divide pasta between bowls and top with walnut breadcrumbs. Enjoy!
