INGREDIENTS
- 8 oz Impossible™ Taco Protein
- 2 oz shredded green cabbage
- 1 tbsp apple cider vinegar
- 1 tbsp chimichurri blend
- 6 yellow corn tortillas
- 1 Roma tomato, chopped
- 1 tbsp hot sauce
- 2 tbsp olive oil (from your kitchen)
- Salt (from your kitchen)
- Pepper (from your kitchen)

INSTRUCTIONS
Heat 1 tbsp olive oil in medium nonstick skillet over medium-high heat. Add taco protein and cook until browned, 5 to 7 minutes.
Combine cabbage, vinegar, just 1/2 tbsp chimichurri blend, 1 tbsp olive oil, and a pinch of pepper in medium bowl.
Wrap tortillas in clean dish towel and microwave to soften, 15 to 30 seconds. Divide warmed tortillas between plates and top with taco protein and slaw. Top with tomatoes and drizzle with hot sauce. ¡Buen apetito! (TIP: You can also wrap tortillas in foil and place in 400°F oven until heated through, 5 to 6 minutes.)
For 4-serving meal, double all ingredients. You may need to cook in batches, in larger cooking vessels, or for longer cook times. Follow visual cues in 2-serving recipe.
