INGREDIENTS
- 2 tbsp crispy onions
- 1 oz California dates, chopped
- 0.5 oz cilantro, leaves and tender stems chopped (divided)
- 1 tbsp ground cumin
- 1/2 tbsp ground coriander
- 1/2 tbsp ground cinnamon
- 1/4 cup caramelized onion jam
- 6 oz farro
- 6 oz beluga lentils
- 1/4 cup cilantro crema
- 2 tbsp + 1 tsp olive oil (from your kitchen)
- Salt (from your kitchen)
- Pepper (from your kitchen)

INSTRUCTIONS
Combine crispy onions, dates, just half the cilantro, 1 tsp olive oil, and a pinch of salt and pepper in small bowl. Set aside.
Heat 2 tbsp olive oil in medium saucepan over medium heat. Add cumin, just ½ tbsp coriander, and just ½ tbsp cinnamon and cook until fragrant, about 1 minute.
Add onion jam, farro, and lentils to saucepan with bloomed spices and cook, stirring frequently, until warmed through, 3 to 4 minutes. Off heat, stir in remaining cilantro. Divide Lebanese farro with lentils between serving bowls. Sprinkle with crispy date topping and serve with cilantro crema. صحه وعافيه!
