Waldorf salad, named for the luxurious Waldorf Astoria hotel where it was created, has all the simple sophistication of its NYC namesake. We add chickpeas to our version, upping the fiber for a meal that fuels. Served with lettuce cups.

  5. 2.5 oz cashew milk yogurt

  7. 1 tbsp apple cider vinegar
  8. 1 celery stalk, diced
  9. 2 tbsp dried cranberries
  10. 1/4 cup walnuts
  11. 1 romaine lettuce heart, leaves separated

Prepare the chickpea salad

Add chickpeas to large bowl and mash with back of fork until they start to stick together and become creamy. Add diced apple, yogurt, mayo, vinegar, celery, dried cranberries, walnuts, and a pinch of salt and pepper to mashed chickpeas and stir.

Serve

Divide Waldorf chickpea salad between two plates and serve with lettuce and apple slices.
