Assemble the sandwiches

Place 2 slices sourdough on clean work surface. Spread cream cheese evenly on sourdough, top with spinach and roasted red peppers, and season to taste with salt and pepper. Gently close sandwiches with remaining sourdough.

Heat 2 tbsp olive oil in large nonstick skillet over medium-high heat. Add sandwiches and cook until golden brown and cheese has melted, 2 to 3 minutes per side. (TIP: If your bread is getting too dark but cheese hasn’t melted yet, lower the heat.)
