  2. 8 oz Italian ground protein
  3. 2 garlic cloves, peeled and minced
  4. 2 tbsp tomato powder
  5. 2 Roma tomatoes, diced
  6. 1 tbsp vegan parmesan
  7. 0.25 oz parsley, leaves and tender stems chopped
  8. 1 tbsp olive oil
  9. Salt

INSTRUCTIONS

Boil the pasta

Bring medium saucepan of salted water to boil. Add pasta and cook until al dente, 8 to 10 minutes. Reserve 1 cup pasta water, drain pasta, and set aside.

Make the sauce

Heat 1 tbsp olive oil in same medium saucepan over medium-high heat. Add Italian protein and cook until browned, 5 to 7 minutes, breaking up large clumps with back of spoon as needed. Add garlic and cook until fragrant, 1 to 2 minutes. Stir in reserved pasta water, tomato powder, and tomatoes, scraping up browned bits from bottom of saucepan. Cover and cook until tomatoes are soft and sauce is slightly thickened, 6 to 9 minutes.

Serve

Stir cooked pasta into sauce. Divide pasta Bolognese between serving bowls and sprinkle with parmesan and parsley. Buon appetito!

CULINARY NOTES:

For 4-serving meal, double all ingredients except pasta water in step 1; reserve just 1¾ cup pasta water. You may need to cook in batches, in larger cooking vessels, or for longer cook times. Follow visual cues in 2-serving recipe.
