Prepare the salads

Peel and dice the mango. Thinly slice the cucumber. Pick the mint leaves from the stems and roughly chop. Halve the lime. Add the lime juice and spicy peanut sauce to a large bowl and whisk to combine.

Add the kale beet blend to the spicy peanut dressing and toss to combine. Divide the salad between bowls. Top with diced mango, sliced cucumber, and chopped mint leaves. Top with peanuts.
